Meet our Head Chef - The Cooden Beach Hotel - Bexhill

Meet the man behind the delicious dishes on our menus – Read his short interview below…

 

What is the most enjoyable part of your job?

Working with my team which I have built up over the past 8 years. It’s great having new members of the team and being able to pass on my knowledge and seeing them progress. I love creating new dishes for our menu too.

What are your favourite items of food / drink items on the menu?

I love Calamari – so the Salt & Pepper Calamari with Chilli Mayonnaise & Red Peppers is a favourite, along with our Signature Candy Floss Sundae. I thoroughly enjoyed coming up with the sundae concept for our beach location and using a favourite sweet treat of mine – popcorn! It is very popular with many guests and customers. Also anything where chocolate is involved is also a hit!

Which event or time of year do you love most at the Hotel?

It has to be Christmas / Winter Time – I am a big fan of Christmas anyway and also enjoy the warm winter comfort foods that come along with that time of year. Its very busy here at the Hotel throughout December and New Year. It requires a lot of menu preparation and making sure we have all we need at all times. However, the exhilaration after such a successful month – over 3000 meals in December 2017 – definitely makes it all worthwhile.

What do you like doing outside of work?

I like to use my down time to fit in some exercise where possible – even if its just a long stroll outside and spending quality time with family and my girl. I love food – so here and there we like to plan a visit to a restaurant as a nice treat.

Who inspires you?

I get daily inspiration from any self-made person who strives to achieve their goals in life and succeed using the limitless possibilities we have.

 

Don’t forget our Brasserie on the Beach menu changes seasonally, as well as having the option of dining al fresco in the summer months on our Beach Terrace!

  1. I loooove the Veggie Breakfast! and also the lentil curry, although Im a bit torn now I have tasted the sea bream, I think it was!
    looking forward to being down at the weekend, ..and seeing all the awesome staff again as well!
